Well I have good news! Last Saturday at about 1pm my husband’s secretary (more “Jacks Of All Trades”) gave birth to a lovely little girl! Yes a girl! I so happy! At last we have a cute sweet little girl. Now I’m just waiting for the next two to be born, the boys should be here by the end of the month! So we have one little rose among the thorns! Enough about babies, this week I did not get up to too much!
I started a baby quilt and made some Chocolate Cupcakes with a Peppermint crisp frosting, I will share the recipe with you all.
I sewed an African theme panel together, by adding a border to it and I decided to hand quilt it. Not much time Nikki! So what do I do, I start hand quilting it with big stitch using a nr 5 quilting needle and Valdani, nr 12 perle cotton thread, using no hoop so that the processes can be quicker! Hope to show you the finished quilt next week.
The Peppermint Crisp Frosting was born out of a need to take a desert to a function and I need it to be portable. Most of the guests enjoy my Peppermint Crisp tart, so I decided to tweet my tart recipe to make a frosting for my favorite Chocolate Cupcakes, click the links if you want to use my recipe or just use your own and frost it with my Peppermint Crisp Frosting, here it goes –
Peppermint Crisp Frosting
250ml (1cup) of whipping cream
½ to ¾ of bottle of Tasha’s Fantastic fudge spread or tin of (385g) caramel condensed milk
(depending on how sweet you like it)
250g Mascarpone cheese
3 x 49g Peppermint crisp milk chocolate bars, crushed, use 2 for the frosting and 1 for decoration
Place all the ingredients in to a large bowl and beat until the mixture holds its shape and looks like softly whipped cream, using a hand mixer. Do not over mix, the mixture will curdle!
When the cupcakes have cooled down, hollow out a little of the centre, fill the hollowed out centre with the Peppermint crisp frosting. Let the filling over flow onto the cupcake top, using a tea spoon or a piping bag. Decorate with the remaining crushed peppermint crisp bar.
